Blueberry Recipes

Directions: Preheat the oven to 375 F. Very lightly grease a 9x13 casserole dish. In a medium-sized mixing bowl, sift together the oats, whole wheat flour, wheat germ, baking soda, baking powder and salt. In another bowl, combine the maple syrup, apple sauce, oil, and soy milk, whisking until well combined. Add the wet ingredients to the dry, mixing until just combined. Gently fold in the blueberries. Spread the batter in the prepared dish and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Transfer the dish to a cooling rack to cool before cutting into bars and serving. |
